Alan and Lisette were part of the Rare Breed's Victorian
group who invited me to be their media representative on the team.
That was for all of us a great learning experience, (I
tried
to make sense of it here). For the Snaiths it was the first taste of Italy's
smallgoods
- opening their eyes to the potential for their meat.
(Think air cured 'coppa' or beef shoulder, cured
like
bresaola.) It's a cut they haven't been able to sell at their regular
weekend Farmers' Market stall. They've made changes. |
