On the same session as Byron and Anne-Marie was Tim Hansen of Mandagery Creek Venison on his family's deer farm at Orange. Tim became involved in the business to stop a declining profitability due to depressed export markets. They opened their own certified abattoir on their property and he started to market aggressively, selling at their local Farmers' Market and to Sydney businesses. With the added value of prepared meat they're also exporting and now look at an increase of 60% on their venison over the current market price.
