For me, Byron Gray from Willowbank Farm in South Albury was the most
compelling case study of the day. Here he is with Ann-Marie Monda of Holy Goat
Organic Cheese Sutton Grange (near Daylesford Vic.) which is another
great story of local business expanding via the Farmers' Markets. Holy Goat
has won a major award recently for their ashed fresh curd cheese. They were at
the Fernleigh Farm Open Day.
The panel session was looking at how the Farmers' Market experience acts as a
business incubator.
Byron's story was 'less is more' and he has given up the chase of supermarket
distribution for his vegetables, and is growing smaller amounts, but of more
varieties (around 65). That allows him to offer fresh product all year round at
the local Hume Murray Food Bowl Market. He always has different heritage
varieties to tempt buyers and in the experiences he shared was that they pre-bag
a lot of product to save time at the counter weighing. You can see a bag for two
dollars for example and it contains that value anyway if bought in bulk, but it
speeds transactions with an even dollar amount. The feedback he gets at the
Albury market dictates what he plants.
