Would ANZAC biscuits taste the same by any other
name? Probably, just don't call them cookies.
These simple oatmeal biscuits tasting of golden syrup and butter have taken
on the ANZAC legend and become greater than the some of their parts.
Everyone wants to give the definitive recipe, but by all accounts Margaret
Fulton's will do nicely.

For Anzac Day, National Museum curator Kirsten Wehner decided to
hold the biscuits up to the light and asked the CWA and Margaret
Fulton to hold a bakeoff. The idea was to select the best entry from the various
states. The biscuits came ready cooked but Margaret, with the help of a
young
audience member, and a young chef from the Hyatt Canberra showed how simple
it was to make a batch.

The judges decision was decided on the basis of whether you like your ANZACs
crunchy or chewy and, when it came to the crunch, ACT representative
Patricia Nossal won the vote. |
